Sicilian Cassata is a very ancient dessert dating back to the Arab domination and is simply the apotheosis of sweetness!

It has a ricotta cheese cream, bitter chocolate and chocolate chips filling.

The outer side part is formed by rectangles of marzipan and sponge cake.  It's covered with icing and decorated with candied fruit.

 

Our cassata is made with 100% sheep’s milk ricotta cheese from sheep farms in Santo Stefano di Quisquina.
